Easy Chicken Gyros with Tzatziki Sauce

Ingredients
- 1 ½ pounds chicken tenderloins, thick ones halved lengthwise
- ½ cup olive oil
- juice of 1 lemon
- 1 teaspoon salt
- ¼ teaspoon cracked black pepper
- ½ teaspoon crushed red pepper flakes
- 1 tablespoon minced garlic
- ½ teaspoon garlic powder
- 1 tablespoon Herbs de Provence (or Italian seasoning)
- ½ cucumber, sliced or chopped
- ½ cup cherry tomatoes, halved
- ¼ red onion, thinly sliced
- 1 tablespoon fresh lemon juice
- salt and pepper, to taste
- pinch of fresh dill (optional)
- white or whole wheat pita bread
- crumbled feta cheese
- green leaf lettuce
- tzatziki sauce
Steps
- Stir together the olive oil, lemon juice, salt, pepper, red pepper flakes, garlic, garlic powder, and Herbs de Provence to make the marinade.
- Add chicken to the marinade, toss to coat, cover, and chill for at least 30 minutes (up to 2 hours for more flavor).
- While the chicken marinates, stir together the cucumber, cherry tomatoes, red onion, lemon juice, salt, pepper, and dill to make the cucumber salad. Set aside.
- Preheat a grill or skillet over medium heat. Cook the marinated chicken for 5-6 minutes per side until cooked through.
- Lay out the pitas and fill each with lettuce, cooked chicken, cucumber salad, feta cheese, and tzatziki sauce.
- Fold or roll the pitas and serve.
Notes
Herbs de Provence can be substituted with Italian seasoning.
