Paneer Hyderabadi Masala (Green Paneer Curry)

Ingredients
- 2 tbsp oil
- 25 cubes paneer
- 2 onions, sliced
- 1 inch ginger
- 8 cloves garlic
- 7 green chillies
- 2 tbsp cashews
- 1 bowl spinach (palak)
- handful mint leaves
- handful coriander leaves
- 1 cup curd
- 1 tsp turmeric
- ½ tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tsp pepper powder
- ¼ cup oil
- 1 tsp cumin seeds
- 1 tsp salt
- 2 tbsp cream
- 2 tbsp kasuri methi, crushed
Steps
- Heat oil in a pan and add cubed paneer. Roast on medium flame, stirring, until light golden brown.
- Soak the roasted paneer in warm water for a few minutes to keep it soft and remove excess oil.
- In the same pan, saute onions until soft.
- Add ginger, garlic, green chillies and cashews; saute until onions turn golden brown.
- Add spinach and saute until it shrinks. Cool the mixture completely.
- Transfer the cooled mixture to a mixer jar, add mint and coriander, and blend to a smooth green paste, adding water if needed.
- In a bowl, mix curd with the masala powders until smooth and lump-free. Set aside.
- Heat oil in a kadai and saute cumin seeds until aromatic.
- Add the green masala paste and cook until raw smell disappears and oil starts separating.
- Add the curd mixture, stir continuously, cover and cook until oil separates from the sides.
- Drain the soaked paneer and add it to the gravy along with salt and cream.
- Cover and simmer for 2 minutes so the paneer absorbs the flavour.
- Add kasuri methi, mix gently, and garnish with cream.
- Serve hot with roti, naan or rice.
