Dal Fry

Ingredients
- ¾ cup toor dal
- 3½ cups water
- 1 tbsp ghee
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 dried red chilli, broken
- few curry leaves
- pinch of asafoetida
- 1 onion, finely chopped
- 1 tsp ginger garlic paste
- 1 green chilli, slit
- ¼ tsp turmeric
- ½ tsp kashmiri red chilli powder
- ½ tsp coriander powder
- 1 tomato, finely chopped
- 1 tsp salt
- ¼ tsp garam masala
- 1 tbsp coriander leaves, finely chopped
- 1 tsp kasuri methi (dried fenugreek leaves)
Steps
- Pressure cook toor dal with 3½ cups water for 5 whistles, until soft.
- In a kadai, heat ghee and splutter mustard seeds, cumin seeds, dried red chilli, curry leaves, and asafoetida.
- Add onion, ginger garlic paste, and green chilli. Sauté until onion softens.
- Add turmeric, chilli powder, and coriander powder. Sauté on low flame.
- Add tomato and cook until soft and mushy.
- Add the cooked dal and salt. Mix well.
- Simmer for 5 minutes, or until the dal turns smooth and absorbs the flavors.
- Stir in garam masala, chopped coriander leaves, and crushed kasuri methi.
- Serve hot with jeera rice or ghee rice.
