Poha Vada (Aval Vadai)

Ingredients
- 1 cup poha (thick, flattened rice)
- ¼ cup thick curd/yogurt
- ¾ tsp salt
- ½ onion, finely chopped
- 1 green chilli, finely chopped
- ½ tsp ginger paste
- few curry leaves, finely chopped
- 2 tbsp coriander leaves, finely chopped
- 2 tbsp rice flour
- oil, for frying
Steps
- Rinse the poha in a sieve with enough water, then transfer to a large bowl.
- Add curd and salt, mix well, and let rest for 10 minutes until the poha softens.
- Mash the softened poha well.
- Add onion, chilli, ginger paste, curry leaves, and coriander leaves, then mix into a dough.
- Add rice flour and mix well to absorb excess water.
- Pinch off ball-sized portions of dough and flatten slightly into patties.
- Deep fry in hot oil over medium flame, stirring occasionally for even cooking.
- Fry until golden brown and crisp.
- Drain on kitchen paper to remove excess oil.
- Serve hot with tomato sauce.
