Poha Vada (Aval Vadai)

Ingredients

  • 1 cup poha (thick, flattened rice)
  • ¼ cup thick curd/yogurt
  • ¾ tsp salt
  • ½ onion, finely chopped
  • 1 green chilli, finely chopped
  • ½ tsp ginger paste
  • few curry leaves, finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • 2 tbsp rice flour
  • oil, for frying

Steps

  1. Rinse the poha in a sieve with enough water, then transfer to a large bowl.
  2. Add curd and salt, mix well, and let rest for 10 minutes until the poha softens.
  3. Mash the softened poha well.
  4. Add onion, chilli, ginger paste, curry leaves, and coriander leaves, then mix into a dough.
  5. Add rice flour and mix well to absorb excess water.
  6. Pinch off ball-sized portions of dough and flatten slightly into patties.
  7. Deep fry in hot oil over medium flame, stirring occasionally for even cooking.
  8. Fry until golden brown and crisp.
  9. Drain on kitchen paper to remove excess oil.
  10. Serve hot with tomato sauce.
