Rice Paddu (Instant Rice Flour Appe)

Ingredients

  • 1½ cups rice flour
  • ½ cup rava (semolina, coarse)
  • ½ tsp salt
  • ¾ cup curd
  • water, as needed
  • ½ onion, finely chopped
  • 1 carrot, grated
  • 2 chillies, finely chopped
  • few curry leaves, chopped
  • 2 tbsp coriander leaves, finely chopped
  • ½ tsp eno fruit salt (or baking soda)
  • oil, for roasting

Steps

  1. In a large bowl, combine rice flour, rava, and salt.
  2. Add curd and mix well.
  3. Add water gradually to form a smooth, lump-free batter.
  4. Let the batter rest for 10 minutes to allow it to soak.
  5. Add onion, carrot, chillies, curry leaves, and coriander leaves; mix well.
  6. Just before cooking, add eno fruit salt and mix until the batter turns frothy.
  7. Heat and grease an appe pan with oil.
  8. Pour batter into the moulds, adding a little oil to each for crispiness.
  9. Cover and cook for 2 minutes or until set.
  10. Flip gently and cook the other side until done.
  11. Serve hot with coconut chutney.

Notes

Best served immediately with spicy coconut chutney.
