Rice Paddu (Instant Rice Flour Appe)

Ingredients
- 1½ cups rice flour
- ½ cup rava (semolina, coarse)
- ½ tsp salt
- ¾ cup curd
- water, as needed
- ½ onion, finely chopped
- 1 carrot, grated
- 2 chillies, finely chopped
- few curry leaves, chopped
- 2 tbsp coriander leaves, finely chopped
- ½ tsp eno fruit salt (or baking soda)
- oil, for roasting
Steps
- In a large bowl, combine rice flour, rava, and salt.
- Add curd and mix well.
- Add water gradually to form a smooth, lump-free batter.
- Let the batter rest for 10 minutes to allow it to soak.
- Add onion, carrot, chillies, curry leaves, and coriander leaves; mix well.
- Just before cooking, add eno fruit salt and mix until the batter turns frothy.
- Heat and grease an appe pan with oil.
- Pour batter into the moulds, adding a little oil to each for crispiness.
- Cover and cook for 2 minutes or until set.
- Flip gently and cook the other side until done.
- Serve hot with coconut chutney.
Notes
Best served immediately with spicy coconut chutney.
