Spring Onion Paratha (Hare Pyaz Paratha)

Ingredients
- 2 cups wheat flour
- ¼ tsp turmeric
- ¾ tsp kashmiri red chilli powder
- ¼ tsp cumin powder
- ½ tsp garam masala
- ½ tsp aamchur (dry mango powder)
- ¼ tsp ajwain (carom seeds)
- 1 tsp ginger paste
- 1 cup spring onion, finely chopped
- ½ tsp salt
- 2 tbsp oil
- water, as needed for kneading
- oil or ghee, for roasting
Steps
- In a large bowl, combine wheat flour, turmeric, chilli powder, cumin powder, and garam masala.
- Add aamchur, ajwain, ginger paste, chopped spring onion, and salt; mix well.
- Add 2 tbsp oil and mix again.
- Add water gradually and knead into a smooth, soft dough.
- Cover the dough and let it rest for 20 minutes.
- Pinch off a small ball of dough and dust with flour.
- Flatten slightly, grease the center with oil, and fold into a square shape.
- Dust with flour and roll out into a square paratha, keeping the layers loose.
- Place the rolled paratha on a hot tawa and cook for about a minute.
- Flip once the base is partly cooked.
- Spread a little oil or ghee on top and press gently on both sides.
- Flip again once or twice until both sides are cooked through.
- Serve hot with raita and pickle.
