Spring Onion Paratha (Hare Pyaz Paratha)

Ingredients

  • 2 cups wheat flour
  • ¼ tsp turmeric
  • ¾ tsp kashmiri red chilli powder
  • ¼ tsp cumin powder
  • ½ tsp garam masala
  • ½ tsp aamchur (dry mango powder)
  • ¼ tsp ajwain (carom seeds)
  • 1 tsp ginger paste
  • 1 cup spring onion, finely chopped
  • ½ tsp salt
  • 2 tbsp oil
  • water, as needed for kneading
  • oil or ghee, for roasting

Steps

  1. In a large bowl, combine wheat flour, turmeric, chilli powder, cumin powder, and garam masala.
  2. Add aamchur, ajwain, ginger paste, chopped spring onion, and salt; mix well.
  3. Add 2 tbsp oil and mix again.
  4. Add water gradually and knead into a smooth, soft dough.
  5. Cover the dough and let it rest for 20 minutes.
  6. Pinch off a small ball of dough and dust with flour.
  7. Flatten slightly, grease the center with oil, and fold into a square shape.
  8. Dust with flour and roll out into a square paratha, keeping the layers loose.
  9. Place the rolled paratha on a hot tawa and cook for about a minute.
  10. Flip once the base is partly cooked.
  11. Spread a little oil or ghee on top and press gently on both sides.
  12. Flip again once or twice until both sides are cooked through.
  13. Serve hot with raita and pickle.
