Milk Powder Gulab Jamun

Ingredients

  • ¾ cup (100 g) unsweetened milk powder
  • ½ cup (60 g) maida (plain flour)
  • ½ tsp baking powder
  • 2 tbsp ghee
  • milk, as needed for kneading
  • ghee or oil, for frying
  • 2 cups sugar
  • 2 cups water
  • 2 cardamom pods
  • ¼ tsp saffron
  • 1 tsp lemon juice
  • 1 tsp rose water

Steps

  1. In a large bowl, mix milk powder, maida, and baking powder.
  2. Add ghee and mix until the flour becomes moist.
  3. Add milk gradually and combine to form a soft dough; do not knead.
  4. Cover the dough and let it rest for 10 minutes.
  5. Meanwhile, make the sugar syrup: combine sugar, water, cardamom, and saffron in a pot.
  6. Boil the syrup for about 5 minutes until slightly sticky, without reaching a string consistency.
  7. Turn off the heat and stir in lemon juice and rose water.
  8. Cover the syrup and set aside.
  9. Shape the rested dough into small, smooth balls without cracks.
  10. Deep fry the balls in medium-hot oil or ghee over low heat, stirring continuously, until golden brown.
  11. Drain the fried jamuns and transfer them into the hot sugar syrup.
  12. Cover and let them soak for about 2 hours until they double in size and absorb the syrup.
  13. Serve gulab jamun warm or with ice cream.

Notes

Lemon juice helps prevent the sugar syrup from crystallizing.
