Paneer Paratha

Ingredients
- 2 cups paneer, grated
- 1/2 tsp cumin powder
- 1 tsp aamchur (dry mango powder)
- 1/2 tsp chilli powder
- 1 inch ginger, grated
- 2 green chillies, finely chopped
- 2 tbsp coriander leaves, finely chopped
- 1/2 tsp salt
- 2 cups wheat flour
- 1/2 tsp salt
- 1/2 tsp ajwain (carom seeds)
- water, as needed for kneading
- oil or ghee, for cooking paratha
Steps
- In a bowl, combine grated paneer, cumin powder, aamchur, chilli powder, ginger, green chillies, coriander leaves, and salt. Mix well to form the stuffing.
- In a separate bowl, mix wheat flour, salt, and ajwain.
- Add water gradually and knead into a soft, smooth dough.
- Cover the dough and let it rest for 15-20 minutes.
- Divide the dough into equal balls and roll each into a small disc.
- Place a portion of the paneer stuffing in the center of the disc and gather the edges to seal, forming a stuffed ball.
- Dust with flour and gently roll out into a paratha, being careful not to let the filling spill out.
- Heat a tawa or griddle and place the rolled paratha on it.
- Cook on medium heat, applying oil or ghee on both sides, until golden brown spots appear.
- Serve hot with butter, yogurt, or pickle.
