Paneer Paratha

Ingredients

  • 2 cups paneer, grated
  • 1/2 tsp cumin powder
  • 1 tsp aamchur (dry mango powder)
  • 1/2 tsp chilli powder
  • 1 inch ginger, grated
  • 2 green chillies, finely chopped
  • 2 tbsp coriander leaves, finely chopped
  • 1/2 tsp salt
  • 2 cups wheat flour
  • 1/2 tsp salt
  • 1/2 tsp ajwain (carom seeds)
  • water, as needed for kneading
  • oil or ghee, for cooking paratha

Steps

  1. In a bowl, combine grated paneer, cumin powder, aamchur, chilli powder, ginger, green chillies, coriander leaves, and salt. Mix well to form the stuffing.
  2. In a separate bowl, mix wheat flour, salt, and ajwain.
  3. Add water gradually and knead into a soft, smooth dough.
  4. Cover the dough and let it rest for 15-20 minutes.
  5. Divide the dough into equal balls and roll each into a small disc.
  6. Place a portion of the paneer stuffing in the center of the disc and gather the edges to seal, forming a stuffed ball.
  7. Dust with flour and gently roll out into a paratha, being careful not to let the filling spill out.
  8. Heat a tawa or griddle and place the rolled paratha on it.
  9. Cook on medium heat, applying oil or ghee on both sides, until golden brown spots appear.
  10. Serve hot with butter, yogurt, or pickle.
