Aloo Laccha Pakora (Crispy Potato Pakoda)

Ingredients
- 4 potatoes
- ¼ tsp turmeric
- 1 tsp chilli powder
- ½ tsp garam masala
- 1 tsp chaat masala
- ½ tsp salt
- pinch of hing (asafoetida)
- 1 green chilli, finely chopped
- 2 tbsp coriander leaves, finely chopped
- ½ cup maida (all-purpose flour)
- ½ cup cornflour
- oil, for frying
Steps
- Peel the potatoes, using large, fresh ones.
- Grate the potatoes in one direction only.
- Place the grated potato in a bowl and rinse with cold water to remove excess starch.
- Drain and squeeze out the water from the potato.
- Add turmeric, chilli powder, garam masala, chaat masala, salt, and hing.
- Add chopped green chilli and coriander leaves; mix well until spices are evenly combined.
- Add maida and cornflour, mixing gently to coat the potato without squeezing, so it stays crispy.
- Take small portions of the mixture and deep fry in hot oil.
- Fry on medium flame, stirring occasionally, until golden brown and crisp.
- Drain the pakoras on a kitchen towel to remove excess oil.
- Serve hot with dahi (yogurt) chutney.
Notes
Cornflour can be replaced with rice flour for a different texture.
