Masala Pav

Ingredients
- 1 tbsp butter
- 1 tsp kasuri methi
- 3 cloves garlic, finely chopped
- ½ tsp ginger paste
- 1 onion, finely chopped
- ½ capsicum, finely chopped
- ¼ tsp turmeric
- ½ tsp chilli powder
- 2 tbsp pav bhaji masala
- ½ tsp salt
- 2 tomatoes, finely chopped
- 2 tsp lemon juice
- 2 tbsp coriander leaves, chopped
- 1 tsp butter
- 1 tsp coriander leaves, chopped
- ¼ tsp pav bhaji masala
- 6 pav (bread rolls)
- onion, finely chopped, for topping
Steps
- Heat 1 tbsp butter in a large kadai and add kasuri methi, chopped garlic, and ginger paste. Sauté until aromatic.
- Add chopped onion and sauté until translucent, without browning.
- Add chopped capsicum and sauté briefly.
- Add turmeric, chilli powder, pav bhaji masala, and salt. Sauté for a minute until fragrant.
- Add chopped tomatoes and cook until mushy, then mash until smooth.
- Stir in lemon juice and chopped coriander. The bhaji is ready.
- In a separate pan, heat 1 tsp butter with chopped coriander and pav bhaji masala until aromatic.
- Slice the pav and toast slightly on both sides.
- Spread a spoonful of the prepared bhaji over the pav.
- Top with chopped onions and close the pav.
- Serve masala pav hot with chopped onions and cucumber.
