Palak Paneer (Spinach Paneer Curry)

Ingredients
- 1 bunch spinach (palak)
- 2 cloves garlic
- 1 inch ginger
- 3 green chillies
- 2 tbsp oil
- 1 tsp butter
- 1 dried red chilli
- 1 tsp cumin
- 1 bay leaf
- 1 onion, finely chopped
- 1 tsp ginger garlic paste
- ¼ tsp turmeric
- ½ tsp chilli powder
- ½ tsp coriander powder
- 1 tsp salt
- few capsicum, sliced
- 1 tomato, chopped
- 1 cup water
- 1 tbsp cream
- 1 tbsp paneer, crumbled
- 250 g paneer, cubed
- ½ tsp garam masala
- 1 tsp kasuri methi, crushed
Steps
- Bring water to a rolling boil in a large vessel and add spinach.
- Turn off the flame and let the spinach sit submerged in the hot water for 2 minutes until blanched.
- Immediately transfer the spinach into ice-cold water to retain its bright green color.
- Transfer the blanched spinach to a blender jar with garlic, ginger, and green chillies.
- Blend to a smooth puree without adding water; set aside.
- Heat oil and butter in a large kadai; add dried red chilli, cumin, and bay leaf. Sauté on low flame until aromatic.
- Add chopped onion and ginger garlic paste; sauté until onions turn golden brown.
- Add turmeric, chilli powder, coriander powder, and salt; sauté until fragrant.
- Add capsicum and sauté until slightly shrunk.
- Add tomato and cook until soft and mushy.
- Add the prepared spinach puree and cook well.
- Add water and adjust consistency as needed.
- Stir in cream and crumbled paneer, mixing until desired consistency is reached.
- Add paneer cubes and simmer for 2 minutes.
- Add garam masala and crushed kasuri methi; mix well.
- Serve hot with roti or rice.
