Dal Makhani (Restaurant Style, Pressure Cooker)

Ingredients
- 3/4 cup whole black urad dal (sabut urad)
- 1/4 cup kidney beans (rajma)
- water, for soaking
- 3 cups water, for pressure cooking
- salt, to taste
- 1-2 tbsp ghee
- 1 bay leaf
- 2 large tomatoes, finely chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric powder
- 1 large onion, finely chopped
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1 tsp kashmiri red chilli powder
- salt, to taste
- 1 cup water, as needed
- 2 tbsp fresh cream
- coriander leaves, chopped, for garnish
- 1 tbsp ghee, for tempering
- a pinch of hing (asafoetida)
- 3/4 tsp kashmiri red chilli powder
- 1/4 tsp garam masala (optional)
Steps
- Soak the urad dal and kidney beans in water for at least 8 hours or overnight.
- Drain the soaked dal and beans, then transfer to a pressure cooker with 3 cups water and salt.
- Pressure cook for about 5-6 whistles, or until the dal and beans are completely soft and mushy.
- Heat ghee in a pan and add the bay leaf.
- Add the finely chopped onion and sauté until golden brown.
- Add ginger-garlic paste and cook until the raw smell disappears.
- Add the chopped tomatoes, turmeric, coriander powder, cumin powder, and chilli powder; cook until the tomatoes soften and the oil separates.
- Add the cooked dal and beans along with their cooking liquid to the masala.
- Add 1 cup water as needed, adjust salt, and simmer for 15-20 minutes, mashing some of the dal to thicken the gravy.
- Stir in the fresh cream and simmer for a few more minutes.
- For the tempering, heat ghee in a small pan, add hing and kashmiri red chilli powder, and immediately pour over the dal.
- Sprinkle garam masala if using, garnish with chopped coriander leaves, and serve hot.
Notes
Long, slow simmering after pressure cooking gives dal makhani its classic creamy texture and deep flavor.
