Matar Kachori (Peas Kachori)

Ingredients
- 2 cups maida (all-purpose flour)
- ¼ tsp ajwain (carom seeds)
- 1 tsp salt, divided
- ¼ cup oil, plus more for kneading
- water, for kneading
- 3 cups peas (fresh or frozen)
- 1 inch ginger
- 4 green chillies
- 2 tbsp oil
- pinch of hing (asafoetida)
- 1 tsp cumin seeds
- ½ tsp fennel seeds
- 2 tbsp besan (gram flour)
- ½ tsp turmeric
- ½ tsp cumin powder
- 1 tsp coriander powder
- ½ tsp garam masala
- 1 tsp kasuri methi (dried fenugreek leaves)
- 1 tsp sugar
- 1 tsp dry mango powder (amchur)
- oil, for frying
Steps
- In a large bowl, combine maida, ajwain, ½ tsp salt, and ¼ cup oil. Rub together until well mixed.
- Add water gradually and knead into a smooth dough.
- Grease the dough with a little oil, cover, and let rest for 30 minutes.
- Meanwhile, sauté the peas until they turn aromatic and soften. Let cool completely.
- Transfer cooled peas to a blender, add ginger and green chillies, and grind to a coarse paste.
- Heat 2 tbsp oil in a pan. Add hing, cumin seeds, and fennel seeds; sauté until fragrant.
- Add besan and sauté until it turns aromatic.
- Add the peas paste and cook for a minute.
- Lower the flame and add turmeric, cumin powder, coriander powder, garam masala, kasuri methi, remaining ½ tsp salt, sugar, and dry mango powder. Mix well.
- Cook until the stuffing is well combined, then let it cool completely.
- Knead the rested dough again and divide into small balls.
- Flatten each ball into a cup shape using your fingers.
- Place a small portion of the peas stuffing in the center.
- Pleat the edges, seal tightly, and pinch off excess dough.
- Gently flatten each stuffed ball to an even thickness.
- Heat oil on low flame and fry the kachoris, without touching, until they float to the surface (about 3 minutes).
- Flip carefully and fry both sides on low flame until golden brown and crisp.
- Drain on kitchen paper to remove excess oil.
- Serve warm with imli (tamarind) chutney.

Best served with tamarind (imli) chutney.
