Malpua (Sweet Fried Pancakes)

Ingredients
- 1 cup maida (all-purpose flour)
- ¼ cup fine rava (semolina)
- 2 tbsp milk powder
- ½ tsp fennel seeds, crushed
- ½ tsp cardamom powder
- 1 cup milk
- 1 cup sugar
- 1 cup water
- few strands saffron
- pinch saffron food colour
- ½ tsp cardamom powder
- ghee or oil, for frying
- pistachios, for garnish
Steps
- In a bowl, combine maida, rava, milk powder, crushed fennel, and cardamom powder.
- Mix well until evenly combined.
- Add milk and whisk into a batter, adding more milk if needed for a smooth consistency.
- Rest the batter for 1 hour.
- Meanwhile, make the sugar syrup: combine sugar and water in a pan and stir to dissolve.
- Boil until the syrup turns slightly sticky, without reaching a string consistency.
- Stir in saffron strands, saffron food colour, and cardamom powder. Set aside.
- Heat ghee or oil in a pan. Pour a ladleful of batter into the hot oil.
- Fry on medium heat until the malpua puffs up.
- Flip and fry both sides until fully cooked.
- Remove, drain excess oil, and press gently.
- Dip the fried malpua into the sugar syrup, soaking both sides for about 2 minutes until it absorbs the syrup.
- Garnish with pistachios before serving.
