Badam Puri (Badam Poori Sweet)

Ingredients

  • 20 almonds (badam)
  • 2 cups maida (all-purpose flour)
  • 2 tbsp fine rava (semolina)
  • ½ tsp turmeric
  • ½ tsp salt
  • 3 tbsp hot ghee
  • water, as needed (for kneading)
  • 2 cups sugar
  • 1 cup water
  • few strands saffron
  • 1 pinch saffron food colour
  • ½ tsp cardamom powder
  • 1 tsp lemon juice

Steps

  1. Soak the almonds in hot water for 15-20 minutes, then peel off the skins.
  2. Grind the peeled almonds with a little water into a smooth paste.
  3. In a bowl, combine maida, rava, turmeric, and salt.
  4. Add the hot ghee and almond paste to the flour mixture and mix well.
  5. Gradually add water and knead into a smooth, firm dough. Cover and rest for 20 minutes.
  6. Meanwhile, make the sugar syrup: combine sugar and water in a pan and heat.
  7. Add saffron strands, saffron food colour, and cardamom powder to the syrup.
  8. Boil the syrup until it reaches a one-string consistency, then stir in the lemon juice and remove from heat.
  9. Divide the rested dough into portions and roll each into a thin, large circle (like a chapati).
  10. Cut the rolled dough into small diamond or square shapes.
  11. Heat oil for deep frying and fry the cut pieces on low-medium heat until golden and crisp.
  12. Drain the fried puris and immediately soak them in the warm sugar syrup for a few minutes.
  13. Remove the soaked puris from the syrup and let them rest until they absorb the syrup and turn slightly crisp again.
  14. Serve the badam puri once set.
