Sesame Balls (Jian Dui)

Ingredients
- 1 1/2 cups glutinous rice flour
- 80 g sugar (about 1/3 cup plus 2 tbsp)
- 100 ml water, plus more if needed
- 1 cup roasted white sesame seeds
- filling, as needed
- water, for dipping
- glutinous rice flour, for dusting
- oil, for frying
Steps
- Mix a small portion of glutinous rice flour with boiling water to form a small cooked dough.
- Dissolve the sugar in the remaining water, then combine with the rest of the glutinous rice flour and the small cooked dough to form the main dough. Knead until smooth.
- Divide the dough into small portions and flatten each into a disc. Place filling in the center and wrap the dough around it, sealing well and rolling into a smooth ball.
- Dip each ball briefly in water, then roll in roasted white sesame seeds until fully coated.
- Heat oil over low heat and fry the balls slowly, turning frequently, until they puff up and turn golden brown.
- Remove from oil and drain before serving.
