Youtiao (Chinese Fried Dough Sticks)

Ingredients
- oil for deep-frying
- 1 tbsp vegetable oil, for brushing
- 2 cups all purpose flour (about 300g)
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1 egg
- 120 ml water (plus 5ml more if needed)
- 1/2 tbsp vegetable oil
- 1/2 tsp salt
- 1/2 tsp sugar
Steps
- In a large bowl, mix flour, baking powder, baking soda, salt, and sugar.
- In a separate bowl, whisk the egg with water and vegetable oil.
- Pour the wet mixture into the dry ingredients and mix until a rough dough forms.
- Knead the dough briefly until smooth, then cover and rest for about 2 hours at room temperature.
- Brush the work surface and dough with a little vegetable oil to prevent sticking.
- Roll the dough into a rectangle about 1cm thick, then cut into long strips.
- Stack two strips together and press a chopstick lengthwise down the middle to join them, then stretch slightly to elongate.
- Heat oil in a deep pot to about 190°C (375°F).
- Carefully lower each doughnut strip into the hot oil, pressing gently so it puffs and expands.
- Fry, turning occasionally, until golden brown and fully puffed, about 1-2 minutes per batch.
- Remove with a slotted spoon and drain on paper towels.
- Serve warm, traditionally with soy milk or congee.
Notes
Best eaten fresh and warm; can be reheated in an oven or air fryer to restore crispness.
