Homemade Boba Pearls

Ingredients

  • 1 cup (135g) tapioca starch, plus 2 tbsp extra for coating
  • 6 tbsp (90ml) water
  • 60 g brown sugar
  • 1 cup brown sugar (for syrup)
  • 1 brown sugar slab, about 70g (or substitute more brown sugar)
  • 100 ml water (for syrup)

Steps

  1. In a small pot, dissolve 60g brown sugar in 6 tbsp water over low heat to make a dark syrup.
  2. Add the tapioca starch to the hot syrup and stir quickly to form a rough dough.
  3. Once cool enough to handle, knead the dough until smooth.
  4. Roll the dough into a long rope and cut into small even pieces.
  5. Roll each piece into a ball, dusting with extra tapioca starch to prevent sticking.
  6. In a separate pot, combine 1 cup brown sugar, the brown sugar slab, and 100ml water; simmer until fully dissolved to make the sugar syrup.
  7. Bring a large pot of water to a boil and add the boba pearls, stirring gently so they don't stick together.
  8. Cook the pearls until they float, then reduce heat and simmer for about 20-25 minutes, stirring occasionally.
  9. Turn off the heat and let the pearls sit covered for 10-15 minutes to fully cook through.
  10. Drain the pearls and immediately soak them in the prepared brown sugar syrup to prevent sticking and add flavor.
  11. Serve the boba pearls warm in bubble tea or drinks of choice.

Notes

Boba pearls are best consumed fresh within a few hours, as they harden when cooled. Reheat in hot water briefly if needed.
