🇨🇳 China · Sichuan

Servings: 4 Prep: 20 minutes Cook: 20 minutes Total: 40 minutes

Ingredients

  • 1 egg
  • 2 spring onions, chopped
  • 2 cups ground pork
  • 1/4 cup lotus root, minced
  • 1/4 cup carrot, minced
  • 1 inch ginger root, minced
  • 1 tbsp cornstarch
  • dash white pepper powder
  • 2 tsp sesame oil
  • 1 tsp oyster sauce
  • 1 tsp sugar
  • 2 tbsp water
  • 1 tbsp light soy sauce

Steps

  1. In a bowl, combine ground pork, minced lotus root, carrot, ginger, cornstarch, white pepper, sesame oil, oyster sauce, sugar, water, and light soy sauce.
  2. Stir the mixture vigorously in one direction until the pork turns light in color and sticky in texture.
  3. Transfer the pork mixture to a flat steaming plate or bowl and flatten it into an even cake.
  4. Dig a small hole in the center of the meat cake and crack the egg into it (or place a salted duck egg yolk).
  5. Steam for 15 to 20 minutes, depending on the thickness of the meat cake, until fully cooked.
  6. Sprinkle chopped spring onion on top and serve hot.

Notes

A salted duck egg yolk can be used instead of a fresh egg for a more traditional version.
