Chinese Steamed Buns (Mantou)

Ingredients

  • 300 g all-purpose flour, plus 2 tbsp for dusting
  • 1 1/2 tsp instant yeast
  • 2 tbsp sugar (optional)
  • 150 g water, plus up to 20 ml more if needed
  • 1 tbsp vegetable cooking oil

Steps

  1. In a bowl, mix flour, instant yeast, and sugar.
  2. Add water gradually while mixing until a rough dough forms.
  3. Add the vegetable oil and knead until the dough is smooth, adding a little more water if too dry.
  4. Cover the dough and let it rest for a few minutes, then knead again until smooth and elastic.
  5. Shape the dough into a log and cut into even pieces for knife-cut buns, or roll pieces into balls for round mantou.
  6. Place shaped buns on small pieces of parchment paper and let them proof in a warm place until visibly puffy, about 20-30 minutes.
  7. Set up a steamer with water and bring to a simmer.
  8. Place the proofed buns in the steamer, leaving space between them, and steam over medium heat for about 15-20 minutes.
  9. Turn off the heat and let the buns sit in the steamer for 2-3 minutes before opening the lid to prevent collapsing.
  10. Serve warm.

Notes

Buns can be shaped either by knife-cutting a rolled log or by rolling into round balls (traditional mantou style).
