Chinese Scallion Pancakes

Ingredients
- 2 cups all-purpose flour (about 300g)
- 1/2 cup hot boiling water
- 1/4 cup room temperature water
- 1 tsp salt
- 1 tbsp vegetable oil
- 4-6 tbsp cooking oil (for brushing and pan-frying)
- 2 cups chopped scallion (green parts only)
- 1 tbsp Chinese five spice powder (optional)
- 1 tbsp light soy sauce
- 1/2 tbsp sesame oil
- 1/4 tsp salt
- 1 tbsp chili oil
- Chopped green onion and coriander, for serving
Steps
- Mix flour with hot boiling water, stirring quickly to form shaggy dough, then add room temperature water and knead into a smooth dough.
- Cover the dough and let it rest for at least 20 minutes.
- Divide the dough into portions and roll each into a thin rectangle or circle.
- Brush the dough with a thin layer of oil, then sprinkle with salt, five spice powder, and chopped scallions.
- Roll the dough up into a log, then coil it into a spiral and flatten with a rolling pin into a round pancake.
- Heat oil in a pan over medium heat and pan-fry each pancake until golden brown and crispy on both sides.
- Cut into wedges and serve with a dipping sauce of soy sauce, sesame oil, and chili oil, garnished with green onion and coriander.
