Chak-Chak Honey Cake

Ingredients

  • 2 cups flour
  • 3 large eggs
  • 1 1/2 tablespoons cognac or vodka
  • 3 cups oil, for frying
  • 1 cup honey
  • 1/3 cup sugar

Steps

  1. Whisk eggs together in a large bowl.
  2. Stir in cognac or vodka until well combined.
  3. Add flour and stir with a wooden spoon until smooth.
  4. Knead dough on a floured surface until smooth. Cover with a damp towel and let rest 15 minutes.
  5. Roll dough into a rectangle about 1/4 inch thick.
  6. Cut dough into strips about 1 inch wide, layering with flour to prevent sticking. Cut strips into small pieces about 1/4 inch wide and separate on a floured surface.
  7. Heat oil in a large frying pan over high heat until a test piece of dough sizzles immediately.
  8. Fry dough pieces in small batches until slightly golden brown. Remove with a slotted spoon and drain on paper towels.
  9. Heat honey and sugar in a saucepan over low heat until sugar dissolves and mixture is combined.
  10. Place fried dough pieces in a large bowl and pour honey mixture over them, stirring quickly to coat evenly.
  11. With wet hands, mold the coated pieces onto a serving plate, shaping into a pyramid.
  12. Refrigerate about 45 minutes to set before serving with green tea.
