Ingredients
- 14 oz chocolate cookies (such as Oreos, about 35 cookies)
- 6 tablespoons salted butter, melted

- 1 teaspoon vanilla extract
- 3 tablespoons salted butter
- 3 tablespoons very cold heavy cream (minimum 30% fat)
- 2 teaspoons vanilla extract
- 6 tablespoons caster sugar
- Chopped roasted pecans, for topping
- Chocolate shavings, for topping
Steps
- Crust: Crush the chocolate cookies into fine crumbs using a food processor. Mix with melted butter until combined. Press evenly into the bottom and up the sides of a 9-inch springform pan. Chill until firm.
- Brownie layer: Melt the unsalted butter and dark chocolate together. Whisk in the eggs and caster sugar until smooth. Stir in the crushed pecans, espresso, and vanilla extract. Fold in the sifted flour and cocoa powder.
- Pour the brownie batter over the chilled crust and bake until just set. Cool completely on a wire rack.
- Pudding: In a saucepan, whisk together the caster sugar, cornstarch, and salt. Gradually whisk in the milk and egg yolks until smooth.
- Cook over medium heat, stirring constantly, until thickened. Remove from heat and stir in the grated dark chocolate, vanilla extract, and butter until smooth.
- Pour the pudding over the cooled brownie layer and refrigerate until fully set.
- Topping: Whip the cold heavy cream with vanilla extract and caster sugar until soft peaks form.
- Spread or pipe the whipped cream over the chilled pudding layer.
- Garnish with chopped roasted pecans and chocolate shavings before serving.
