Onion Rings with Ranch Dressing

Ingredients
- 2 large onions, peeled and sliced into rings
- 1 cup cold sparkling water
- 1 cup flour
- ½ cup cornstarch
- 1 tablespoon baking powder
- 2 cups bread crumbs
- 1 teaspoon salt
- Pepper, to taste
- 4 cups vegetable oil, for frying
- 6 tablespoons mayonnaise
- 3 tablespoons sour cream
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt, to taste
- Pepper, to taste
- Chopped fresh herbs (chives, parsley, dill)
Steps
- In a bowl, whisk together flour, cornstarch, baking powder, salt, and pepper.
- Add the cold sparkling water and mix until a smooth batter forms.
- Place the bread crumbs in a separate shallow dish.
- Dip each onion ring into the batter, letting excess drip off, then coat with bread crumbs.
- Heat the vegetable oil in a deep pan or fryer to 350°F (175°C).
- Fry the onion rings in batches until golden brown and crispy, about 2-3 minutes per batch.
- Remove and drain on paper towels.
- For the ranch dressing, mix together mayonnaise, sour cream, garlic powder, onion powder, salt, and pepper.
- Stir in the chopped fresh herbs.
- Serve the onion rings hot with the ranch dressing on the side.
