Fideuà

Ingredients
- 3 cloves garlic
- 1 egg
- 3 walnuts, shelled
- 1 teaspoon lemon juice, freshly squeezed
- ½ cup extra virgin olive oil
- 16 oz fideuá noodles (thin, short pasta)
- 4 cups fish stock, hot
- 12 mussels
- 6 oz monkfish fillet, chopped
- 6 oz cuttlefish, cleaned and chopped
- 4 large prawns
- 4 crayfish
- ½ green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 large onion, grated
- 2 cloves garlic, minced
- 4 Roma tomatoes, ripe, chopped
- Extra virgin olive oil
- Salt
Steps
- Make the aioli: in a tall narrow container, combine the garlic, egg, walnuts, and lemon juice.
- Add the olive oil and blend with a hand mixer, starting at the bottom and slowly moving up, until a thick emulsified sauce forms. Season with salt and set aside.
- Clean the mussels and steam them in a pot with a little water until they open. Remove from shells and reserve the cooking liquid.
- In a paella pan, heat a drizzle of olive oil and sear the monkfish, cuttlefish, prawns, and crayfish briefly until lightly golden. Remove and set aside.
- In the same pan, sauté the onion, green pepper, and red pepper over medium heat until softened.
- Add the minced garlic and chopped tomatoes, cooking until the mixture reduces into a thick sofrito.
- Add the fideuá noodles to the pan and toast them briefly in the sofrito, stirring to coat.
- Pour in the hot fish stock, distributing the noodles evenly across the pan without stirring further.
- Return the seared seafood and mussels to the pan, nestling them into the noodles.
- Cook over medium-high heat, then transfer to the oven, until the noodles absorb the liquid and the top becomes lightly crisp.
- Remove from the oven and let rest a few minutes before serving with the aioli on the side.
Notes
Traditionally cooked in a paella pan and finished in the oven to crisp the noodle tips; aioli is served alongside for each diner to add to taste.
