Chocolate con Churros

Ingredients

  • 2 cups water
  • 2 cups flour
  • 1/3 cup sugar
  • 1 pinch salt
  • Vegetable oil, for frying
  • 2 cups whole milk
  • 5 oz dark chocolate
  • 1 tablespoon cornstarch

Steps

  1. Bring water and salt to a boil.
  2. Turn off the heat and stir in the flour mixed with sugar, mixing vigorously with a wooden spoon until a smooth dough forms that separates easily from the pan sides.
  3. Let the dough cool.
  4. Heat oil in a pan for deep frying.
  5. Transfer the dough to a churrera or a piping bag fitted with a star tip.
  6. Pipe sticks about 5 inches (12 cm) long directly into the hot oil, frying only a few at a time to prevent sticking.
  7. Turn the churros with a slotted spoon as they cook, and once golden brown, remove and drain on paper towels.
  8. Sprinkle with sugar, or leave plain for dipping in hot chocolate.
  9. In a saucepan, whisk the cornstarch into a small amount of milk until smooth.
  10. Add the remaining milk and chocolate to the saucepan and heat over medium-low heat, stirring constantly until the chocolate melts and the mixture thickens into a smooth hot chocolate.
  11. Serve the hot chocolate warm alongside the churros for dipping.
