Greek Yogurt Salad Dressing

Ingredients

  • 4 tablespoons Greek yogurt (up to 6 tablespoons for extra creamy)
  • 1 tablespoon mild yellow mustard
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1 teaspoon honey (or maple syrup)
  • ½ teaspoon lemon zest
  • 1 small garlic clove, pressed or finely grated
  • 1 teaspoon dried oregano
  • ½ cup extra virgin olive oil
  • salt and ground pepper, to taste

Steps

  1. If using a whisk, add all ingredients except the olive oil to a mixing bowl and whisk to combine.
  2. Gradually pour in the olive oil while whisking constantly until emulsified.
  3. Alternatively, if using an immersion blender, add all ingredients to a jug or bowl and pulse until smooth and uniform.
  4. Store in the fridge for up to a week.
