Ingredients
- 300 g all-purpose flour
- 150 g cold butter, cubed
- 2 egg yolks
- 3 tbsp cold water
- 1 pinch salt
- 4 eggs
- 80 g sugar
- 100 ml cream (33-35% fat)
- 390 g condensed milk (1 can)
- 150 ml lemon juice (about 4 lemons)
- 4 egg whites
- 200 g sugar
- 75 ml water
Steps
- Make the pastry: combine flour and salt, cut in cold butter until crumbly.
- Add egg yolks and cold water, mix just until dough comes together.
- Shape dough into a disc, wrap, and chill in the refrigerator.
- Roll out chilled dough and line a pie dish; blind bake until golden.
- Make the lemon filling: whisk eggs and sugar together until combined.
- Add cream, condensed milk, and lemon juice; whisk until smooth.
- Cook the mixture over low heat, stirring constantly, until thickened.
- Pour the lemon filling into the baked pastry shell and let set.
- Make the Italian meringue: heat sugar and water to soft-ball stage (syrup).
- Whip egg whites to soft peaks, then slowly pour in hot syrup while whisking.
- Continue whisking until meringue is glossy, thick, and cooled.
- Assemble the pie: pipe or spread meringue over the set lemon filling.
- Toast the meringue with a kitchen torch or under a broiler until golden.
- Chill the pie before slicing and serving.
