Greek-Style Baked Sea Bream with Homemade Tzatziki

Ingredients
- 1 whole sea bream (about 700-900 g / 1.5-2 lb)
- 2 clusters cherry tomatoes
- 1 lemon, sliced
- 1 green garlic stalk, sliced (or spring onion)
- 5 garlic cloves
- a handful of Kalamata olives
- 50 ml olive oil
- salt and pepper, to taste
- dill
- thyme
- sweet paprika
- whole peppercorns
- 2-3 sprigs fresh rosemary
- fried new potatoes, to serve
- 200 g Greek yogurt
- 3 tablespoons olive oil
- 1 garlic clove
- 1 cucumber, grated and squeezed well
- fresh dill
- tzatziki seasoning mix (optional)
- salt and pepper, to taste
Steps
- Preheat the oven to a high roasting temperature (about 200°C / 400°F).
- Clean and scale the sea bream, then pat dry.
- Score the skin a few times and season the fish inside and out with salt, pepper, sweet paprika, dill, and thyme.
- Stuff the cavity with sliced lemon, garlic cloves, and rosemary sprigs.
- Place the fish on a baking tray with cherry tomatoes, sliced green garlic, and Kalamata olives.
- Drizzle everything with olive oil and scatter whole peppercorns over the top.
- Bake for about 25 minutes, until the fish is cooked through and the skin is lightly crisp.
- Meanwhile, mix Greek yogurt, olive oil, grated and squeezed cucumber, minced garlic, and chopped fresh dill to make the tzatziki.
- Season the tzatziki with salt, pepper, and tzatziki seasoning mix if using.
- Serve the baked sea bream hot with fried new potatoes and the tzatziki on the side.
