Old-Fashioned Deep Dish Apple Pie

Ingredients
- 1 double pie crust (homemade or store-bought)
- 3 to 3 1/2 lb baking apples
- 1 tbsp fresh lemon juice
- 3/4 cup sugar
- 1/3 cup light brown sugar
- 1/4 tsp salt
- 4 tbsp cornstarch
- 3/4 tsp cinnamon
- granulated or sparkling sugar, for sprinkling
- 1 large egg yolk
- 2 tsp water
Steps
- Prepare the pie dough and chill as directed. Preheat oven to 400°F with rack in the bottom third.
- Peel, core, and slice the apples. Toss with lemon juice, sugar, brown sugar, salt, cornstarch, and cinnamon.
- Roll out half of the dough and fit into a deep pie dish.
- Fill the crust with the apple mixture.
- Roll out the remaining dough and place over the filling; seal and crimp the edges, then cut vents in the top.
- Whisk egg yolk with water and brush over the top crust; sprinkle with sugar.
- Bake until the crust is golden and the filling is bubbling, about 75 minutes. Cool before slicing.
