Old-Fashioned Deep Dish Apple Pie

Ingredients

  • 1 double pie crust (homemade or store-bought)
  • 3 to 3 1/2 lb baking apples
  • 1 tbsp fresh lemon juice
  • 3/4 cup sugar
  • 1/3 cup light brown sugar
  • 1/4 tsp salt
  • 4 tbsp cornstarch
  • 3/4 tsp cinnamon
  • granulated or sparkling sugar, for sprinkling
  • 1 large egg yolk
  • 2 tsp water

Steps

  1. Prepare the pie dough and chill as directed. Preheat oven to 400°F with rack in the bottom third.
  2. Peel, core, and slice the apples. Toss with lemon juice, sugar, brown sugar, salt, cornstarch, and cinnamon.
  3. Roll out half of the dough and fit into a deep pie dish.
  4. Fill the crust with the apple mixture.
  5. Roll out the remaining dough and place over the filling; seal and crimp the edges, then cut vents in the top.
  6. Whisk egg yolk with water and brush over the top crust; sprinkle with sugar.
  7. Bake until the crust is golden and the filling is bubbling, about 75 minutes. Cool before slicing.
