Danpatjuk (Korean Sweet Red Bean Porridge)

Ingredients

  • 10 oz (300 g) small red beans (azuki beans)
  • 2 tsp salt, divided
  • 8 cups water
  • 4-6 tbsp sugar or honey (or a mix of both)
  • 1/2 tsp ground cinnamon
  • salt, to taste
  • 2 tbsp sweet rice flour (chapssal-garu)
  • 1/2 cup water
  • injeolmi, walnut, almond, or pine nut, chopped, for topping

Steps

  1. Rinse the red beans and place in a pot with plenty of water. Add 1 teaspoon of salt, bring to a boil, and cook for 10 minutes. Drain and discard the water.
  2. Return the beans to the pot with 8 cups of fresh water. Bring to a boil, cover, and simmer over medium heat for 30 minutes.
  3. Lower the heat and continue simmering for another 50 minutes, adding water as needed, until the beans are very soft and easily mashed.
  4. Remove from heat and mash the beans to your preferred texture, using an immersion blender for a smoother porridge.
  5. Return the pot to low heat and stir in the sugar or honey, remaining 1 teaspoon of salt, and cinnamon.
  6. Whisk the sweet rice flour with 1/2 cup water in a small bowl to make a slurry.
  7. Slowly stir the slurry into the pot until the porridge thickens to your liking.
  8. Ladle into bowls, top with injeolmi or chopped nuts if desired, and serve warm.
