Twisted Donuts (Kkwabaegi)

Ingredients
- 1 1/3 cup water, lukewarm
- 5 tbsp butter, melted
- 5 tbsp sugar
- 2 large eggs, room temperature
- 3 1/2 cups bread flour
- 1 cup tapioca flour
- 3 tbsp dry milk powder
- 1 tbsp instant yeast
- 1 tsp kosher salt
- 2 cups oil, for deep-frying
- 1/2 cup sugar
- 2-3 tsp cinnamon
Steps
- In a large bowl, combine lukewarm water, melted butter, sugar, and eggs, mixing well.
- Add bread flour, tapioca flour, dry milk powder, instant yeast, and salt. Mix until a smooth, elastic dough forms.
- Cover the dough and let it rise in a warm place until doubled in size, about 1 hour.
- Punch down the risen dough and divide it into 20 equal portions.
- Roll each portion into a long rope, then twist it into a spiral shape to form the donut.
- Let the shaped donuts rest and rise again for about 20-30 minutes.
- Heat oil in a deep pot or fryer to 325°F (165°C).
- Fry the donuts in batches, turning occasionally, until golden brown on all sides, about 3-4 minutes per batch.
- Remove donuts and drain excess oil on a paper towel-lined tray.
- Mix sugar and cinnamon together in a bowl to make cinnamon sugar.
- While donuts are still warm, roll them in the cinnamon sugar mixture until well coated.
- Serve warm or at room temperature.
