Twisted Donuts (Kkwabaegi)

Ingredients

  • 1 1/3 cup water, lukewarm
  • 5 tbsp butter, melted
  • 5 tbsp sugar
  • 2 large eggs, room temperature
  • 3 1/2 cups bread flour
  • 1 cup tapioca flour
  • 3 tbsp dry milk powder
  • 1 tbsp instant yeast
  • 1 tsp kosher salt
  • 2 cups oil, for deep-frying
  • 1/2 cup sugar
  • 2-3 tsp cinnamon

Steps

  1. In a large bowl, combine lukewarm water, melted butter, sugar, and eggs, mixing well.
  2. Add bread flour, tapioca flour, dry milk powder, instant yeast, and salt. Mix until a smooth, elastic dough forms.
  3. Cover the dough and let it rise in a warm place until doubled in size, about 1 hour.
  4. Punch down the risen dough and divide it into 20 equal portions.
  5. Roll each portion into a long rope, then twist it into a spiral shape to form the donut.
  6. Let the shaped donuts rest and rise again for about 20-30 minutes.
  7. Heat oil in a deep pot or fryer to 325°F (165°C).
  8. Fry the donuts in batches, turning occasionally, until golden brown on all sides, about 3-4 minutes per batch.
  9. Remove donuts and drain excess oil on a paper towel-lined tray.
  10. Mix sugar and cinnamon together in a bowl to make cinnamon sugar.
  11. While donuts are still warm, roll them in the cinnamon sugar mixture until well coated.
  12. Serve warm or at room temperature.
