Janchi Guksu (Korean Noodle Soup)

Ingredients
- 8 oz (225 g) somyeon noodles
- 5 cups (1.2 liters) water
- 1 anchovy-kelp dashi packet (or 3 anchovy stock coins)
- 2 tbsp Korean fish sauce, divided
- salt, to taste
- 7 oz (200 g) mung bean sprouts
- 1 1/2 oz (40 g) Asian chives, sliced
- 1 1/2 tbsp soy sauce
- 1 tbsp Korean chili flakes (gochugaru)
- 1 tsp sugar
- 3-4 pieces fried tofu (yubu), sliced
- 1 bag roasted seaweed snacks, crumbled
- 2 tbsp toasted sesame seeds, crushed
- fried egg strips, for topping
- chopped kimchi, for topping
Steps
- In a pot, combine water and the anchovy-kelp dashi packet. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Remove the dashi packet and season the broth with 1 tbsp fish sauce and salt to taste. Keep warm.
- Boil somyeon noodles in a large pot of water according to package instructions, adding a splash of cold water once or twice to keep them chewy.
- Drain the noodles and rinse under cold water to stop cooking and remove excess starch. Set aside.
- Bring a small pot of water to a boil and blanch the mung bean sprouts for 5 seconds, then rinse immediately in cold water and drain well.
- Toss the blanched sprouts with chives, soy sauce, remaining 1 tbsp fish sauce, chili flakes, and sugar.
- Cut the fried tofu into strips or bite-sized pieces. Prepare egg strips, kimchi, or other toppings as desired.
- Divide the cooked noodles among serving bowls.
- Top with the seasoned bean sprout mixture and tofu, then add crumbled seaweed and sesame seeds.
- Gently ladle hot broth around the noodles, just enough to immerse them, and serve immediately.
