Korean Acorn Jelly (Dotori Muk)

Ingredients
- 1 cup acorn flour
- 5 1/2 cups water
- 1/2 tsp salt
- 2 tsp sesame oil
- -- For the spicy topping sauce --
- 1 tbsp Korean chili flakes (gochugaru)
- 2 tbsp soy sauce
- 1/2 tbsp minced garlic
- 1 tbsp sesame oil
- 1 tbsp toasted sesame seeds
- -- For the acorn jelly salad --
- 1 handful salad greens
- 1 handful perilla leaves
- 1 handful cucumber, sliced
- 1 handful carrot, sliced
- 1 1/2 tbsp Korean chili flakes (gochugaru)
- 1 1/2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1/2 tbsp sugar
- 1 tbsp toasted sesame seeds
Steps
- Brush a 1 1/2 quart square container with oil and set aside.
- In a large pot, whisk together acorn flour, salt, and water until smooth.
- Heat the mixture over medium-high heat, whisking constantly as it warms.
- When the mixture darkens and large bubbles form, reduce heat to a simmer and cook 5-6 minutes, stirring constantly to prevent sticking.
- Once thickened, stir in 2 teaspoons sesame oil until fully incorporated.
- Pour the jelly into the prepared container, smooth the top, and cover with plastic wrap.
- Let cool to room temperature, then refrigerate overnight to set.
- Turn the set jelly out onto a cutting board and slice into 3/8-inch thick pieces.
- For the spicy topping sauce, mix chili flakes, soy sauce, minced garlic, sesame oil, and toasted sesame seeds together; spoon over sliced jelly to serve.
- For the acorn jelly salad, toss sliced jelly with salad greens, perilla leaves, cucumber, and carrot.
- Mix chili flakes, soy sauce, rice vinegar, sugar, and toasted sesame seeds together, then pour over the salad and toss to combine before serving.
Notes
Two serving options are given: as slices topped with a spicy sauce, or tossed into a salad with vegetables and a tangy chili dressing.
