Egg Salad Sandwich

Ingredients

  • 6 large eggs
  • 1/3 cup mayonnaise
  • 1/4 teaspoon curry powder
  • 2 teaspoons diced dill pickles
  • 1 teaspoon prepared yellow mustard
  • 1/4 cup chopped green onion
  • salt and pepper, to taste
  • lettuce and tomatoes (optional)
  • 3-5 cooked bacon slices (optional)

Steps

  1. Place eggs in a medium saucepan and cover with cold water. Bring to a rolling boil, then turn off heat, cover, and let sit for 10-12 minutes.
  2. Peel the eggs and cut into quarters; place in a medium bowl.
  3. Add chopped bacon, mayonnaise, curry powder, pickles, mustard, and green onions. Season with salt and pepper to taste.
  4. Toast bread if desired, then spread egg salad on bread slices.
  5. Top with bacon, tomatoes, and lettuce as desired, and serve.
