Egg Salad Sandwich

Ingredients
- 6 large eggs
- 1/3 cup mayonnaise
- 1/4 teaspoon curry powder
- 2 teaspoons diced dill pickles
- 1 teaspoon prepared yellow mustard
- 1/4 cup chopped green onion
- salt and pepper, to taste
- lettuce and tomatoes (optional)
- 3-5 cooked bacon slices (optional)
Steps
- Place eggs in a medium saucepan and cover with cold water. Bring to a rolling boil, then turn off heat, cover, and let sit for 10-12 minutes.
- Peel the eggs and cut into quarters; place in a medium bowl.
- Add chopped bacon, mayonnaise, curry powder, pickles, mustard, and green onions. Season with salt and pepper to taste.
- Toast bread if desired, then spread egg salad on bread slices.
- Top with bacon, tomatoes, and lettuce as desired, and serve.
