Busan Pork Rice Soup (Dwaeji Gukbap)

Ingredients
- 8 cups (2 liters) bone broth
- 1½ lb (680 g) pork shoulder
- 3½ oz (100 g) Asian garlic chives, diced
- 3 green onions, finely chopped
- 2 tbsp salted shrimp (optional)
- salt and pepper, to taste
- 3-4 cups (600-800 g) cooked rice, for serving
- 5 tbsp (30 g) Korean chili flakes (gochugaru)
- 2 tbsp (18 g) minced garlic
- 5 tbsp (75 ml) Korean tuna sauce
- a few dashes black pepper
Steps
- Pour the bone broth into a pot and bring to a gentle simmer over medium heat.
- In a small bowl, mix gochugaru, minced garlic, tuna sauce, and black pepper to make dadaegi. Set aside.
- In a separate pot, bring water to a boil, add salt and pork shoulder, and boil for 10–12 minutes.
- Turn off the heat, cover the pot, and let the pork rest in the hot water for 30 minutes until tender.
- Remove the pork, let it cool slightly, then slice thinly against the grain.
- Divide the hot broth into serving bowls and add sliced pork and cooked rice to each bowl.
- Top with garlic chives, green onion, and a spoonful of dadaegi.
- Season with salted shrimp, salt, and pepper to taste, and serve hot.
