Homemade Fish Sauce

Ingredients
- 1.5 lb whole small anchovies
- 3 tablespoons sea salt
- 2 cups water
- 2 cloves garlic, mashed
- 2 bay leaves, crumbled
- 1 teaspoon black peppercorns
Steps
- Rinse the anchovies well and place them in a pot.
- Add the water, sea salt, garlic, bay leaves, and peppercorns.
- Bring to a simmer over medium heat, then reduce heat and cook gently, stirring occasionally, until the anchovies break down.
- Strain the liquid through a fine mesh sieve or cheesecloth, pressing to extract as much liquid as possible.
- Discard the solids and let the strained liquid cool.
- Store the sauce in a sealed container in the refrigerator.
Notes
This is a quick homemade approximation of fish sauce, not the traditionally fermented version, which typically takes months to over a year to produce.
