Homemade Fish Sauce

Ingredients

  • 1.5 lb whole small anchovies
  • 3 tablespoons sea salt
  • 2 cups water
  • 2 cloves garlic, mashed
  • 2 bay leaves, crumbled
  • 1 teaspoon black peppercorns

Steps

  1. Rinse the anchovies well and place them in a pot.
  2. Add the water, sea salt, garlic, bay leaves, and peppercorns.
  3. Bring to a simmer over medium heat, then reduce heat and cook gently, stirring occasionally, until the anchovies break down.
  4. Strain the liquid through a fine mesh sieve or cheesecloth, pressing to extract as much liquid as possible.
  5. Discard the solids and let the strained liquid cool.
  6. Store the sauce in a sealed container in the refrigerator.

Notes

This is a quick homemade approximation of fish sauce, not the traditionally fermented version, which typically takes months to over a year to produce.
