Bún Bò Huế (Spicy Vietnamese Beef & Pork Noodle Soup)

Ingredients
- 2 lb beef shank
- 2 lb oxtail
- 2 lb pork hocks
- 1 lb Huế-style pork sausage (chả Huế), sliced
- 1 lb block pork blood, cubed
- water, to cover meat
- 24 oz chicken broth
- 12 stalks lemongrass, tops removed and roots smashed
- 2 large yellow onions, halved
- 3 tbsp salt
- 2 tbsp sugar
- 2 tbsp shrimp paste
- 3-4 tbsp fish sauce
- 2 tsp MSG (use 4 tsp if not using oxtail)
- 3 tbsp annatto seeds
- 3 tbsp neutral cooking oil
- 2 tbsp shallot, sliced
- 2 tbsp garlic, minced
- 1 banana flower, thinly sliced
- 2 cups water
- 1 lemon, juiced
- 14 oz dried rice noodles, medium or large thickness

- bird's eye chile or jalapeño, for serving
- lime, sliced, for serving
- 20 g dried Thai chile, crushed
- 1/2 cup neutral cooking oil
- 80 g shallot or white onion, minced
- 40 g garlic, minced
- 30 g lemongrass, minced
- 2 tbsp Korean chile powder (gochugaru)
- 1 tbsp fish sauce
- 1 tbsp sugar
- 2/3 tsp salt
- 1/2 tsp MSG
Steps
- Parboil beef shank, oxtail, and pork hocks in boiling water for a few minutes to remove impurities, then rinse.
- Place the parboiled meats in a large pot, cover with water, and add chicken broth.
- Add smashed lemongrass stalks and halved onions to the pot.
- Bring to a boil, then reduce heat and simmer for 2-3 hours until meats are tender, skimming off foam periodically.
- Remove cooked onions and lemongrass from the broth once fully infused.
- Season the broth with salt, sugar, shrimp paste, fish sauce, and MSG to taste.
- In a small pan, heat 3 tbsp oil with annatto seeds until the oil turns deep red, then strain out the seeds.
- Sauté sliced shallot and minced garlic in the annatto oil until fragrant, then stir this mixture into the broth for color and flavor.
- Slice cooked beef shank and pork hocks, and slice the Huế-style pork sausage; set aside for assembly.
- Simmer pork blood cubes gently in a separate pot of water until fully set and cooked through, then slice.
- Soak sliced banana flower in a bowl of water mixed with lemon juice to prevent browning; drain before serving.
- Cook dried rice noodles according to package instructions until tender, then drain.
- To make the saté condiment, heat 1/2 cup oil in a pan and sauté minced shallot, garlic, and lemongrass until fragrant.
- Add crushed dried Thai chile and Korean chile powder to the pan and cook briefly to release color and aroma.
- Season the saté with fish sauce, sugar, salt, and MSG, then simmer until thickened; cool and reserve.
- To assemble, place noodles in a bowl, top with sliced beef, pork hocks, sausage, and pork blood.
- Ladle hot broth over the bowl and top with a spoonful of saté condiment.
- Serve with mint, basil, bean sprouts, sliced banana flower, chiles, and lime on the side.
