Peanut Butter Noodles

Ingredients
- 4 oz noodles (udon, brown rice, ramen, or soba)
- water, for boiling
- 1 tbsp neutral oil
- 1 tsp grated garlic
- 1 tsp grated ginger
- white part of 1 green onion stalk
- 2 tbsp coconut milk
- 1 tbsp soy sauce
- 1 tsp rice vinegar
- 1 tsp red miso
- 1 tsp honey
- 1/4 tsp roasted sesame oil
- 1/2 tsp chili crisp (optional)
- 3 tbsp natural peanut butter, unsalted
- 2 tbsp hot water, plus more if needed
- roasted peanuts, chopped, for topping
- 1 cup shredded red cabbage
- 1 medium cucumber, sliced into half circles
- 1 carrot, shredded
- 1 stalk green onion, thinly sliced
- 1 cup shelled edamame
- lime juice, to taste
Steps
- Cook noodles according to package instructions in boiling water, then drain.
- Heat neutral oil in a pan over medium heat and sauté grated garlic, ginger, and the white part of the green onion until fragrant.
- Add coconut milk, soy sauce, rice vinegar, red miso, honey, sesame oil, and chili crisp (if using) to the pan and stir to combine.
- Whisk in peanut butter and hot water until the sauce is smooth, adding more hot water as needed to reach desired consistency.
- Toss the cooked noodles in the peanut butter sauce until well coated.
- Divide noodles between bowls and top with shredded red cabbage, cucumber, carrot, sliced green onion, and edamame.
- Garnish with chopped roasted peanuts and a squeeze of lime juice before serving.
