Peanut Butter Noodles

Ingredients

  • 4 oz noodles (udon, brown rice, ramen, or soba)
  • water, for boiling
  • 1 tbsp neutral oil
  • 1 tsp grated garlic
  • 1 tsp grated ginger
  • white part of 1 green onion stalk
  • 2 tbsp coconut milk
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp red miso
  • 1 tsp honey
  • 1/4 tsp roasted sesame oil
  • 1/2 tsp chili crisp (optional)
  • 3 tbsp natural peanut butter, unsalted
  • 2 tbsp hot water, plus more if needed
  • roasted peanuts, chopped, for topping
  • 1 cup shredded red cabbage
  • 1 medium cucumber, sliced into half circles
  • 1 carrot, shredded
  • 1 stalk green onion, thinly sliced
  • 1 cup shelled edamame
  • lime juice, to taste

Steps

  1. Cook noodles according to package instructions in boiling water, then drain.
  2. Heat neutral oil in a pan over medium heat and sauté grated garlic, ginger, and the white part of the green onion until fragrant.
  3. Add coconut milk, soy sauce, rice vinegar, red miso, honey, sesame oil, and chili crisp (if using) to the pan and stir to combine.
  4. Whisk in peanut butter and hot water until the sauce is smooth, adding more hot water as needed to reach desired consistency.
  5. Toss the cooked noodles in the peanut butter sauce until well coated.
  6. Divide noodles between bowls and top with shredded red cabbage, cucumber, carrot, sliced green onion, and edamame.
  7. Garnish with chopped roasted peanuts and a squeeze of lime juice before serving.
