Egg Muffins

Ingredients
- 1-2 tablespoons unsalted butter
- 1 cup sliced mushrooms
- ½ cup diced onion
- ½-1 teaspoon minced garlic
- 12 large eggs
- 1 cup chopped, cooked bacon
- 1 cup diced ham
- 1-2 tomatoes, diced
- ½ red bell pepper, diced
- ½ cup red bell pepper, diced
- ½ cup grated cheddar cheese
- 1-2 cups baby spinach, sliced
- salt and pepper, to taste
Steps
- Preheat oven to 350°F. Grease a muffin tin generously with nonstick cooking spray.
- Melt butter in a frying pan, then sauté mushrooms, onions, and garlic for 3-5 minutes. Set aside.
- Whisk eggs in a large bowl with salt and pepper to taste.
- Mix the sautéed onion-mushroom mixture into the eggs.
- Place bacon, ham, tomatoes, red pepper, cheese, and spinach into the muffin cups as desired.
- Pour the egg mixture evenly over the ingredients in the muffin cups.
- Bake for 22-25 minutes, or until eggs are set.
- Let cool in the pan for 5 minutes; muffins will deflate slightly as they cool.
- Loosen muffin edges with a small knife and remove from pan.
- Serve immediately with avocado, salsa, herbs, or hot sauce, if desired.
- Cool completely and freeze in a zip-top bag or airtight container for later use.
