Egg Muffins

Ingredients

  • 1-2 tablespoons unsalted butter
  • 1 cup sliced mushrooms
  • ½ cup diced onion
  • ½-1 teaspoon minced garlic
  • 12 large eggs
  • 1 cup chopped, cooked bacon
  • 1 cup diced ham
  • 1-2 tomatoes, diced
  • ½ red bell pepper, diced
  • ½ cup red bell pepper, diced
  • ½ cup grated cheddar cheese
  • 1-2 cups baby spinach, sliced
  • salt and pepper, to taste

Steps

  1. Preheat oven to 350°F. Grease a muffin tin generously with nonstick cooking spray.
  2. Melt butter in a frying pan, then sauté mushrooms, onions, and garlic for 3-5 minutes. Set aside.
  3. Whisk eggs in a large bowl with salt and pepper to taste.
  4. Mix the sautéed onion-mushroom mixture into the eggs.
  5. Place bacon, ham, tomatoes, red pepper, cheese, and spinach into the muffin cups as desired.
  6. Pour the egg mixture evenly over the ingredients in the muffin cups.
  7. Bake for 22-25 minutes, or until eggs are set.
  8. Let cool in the pan for 5 minutes; muffins will deflate slightly as they cool.
  9. Loosen muffin edges with a small knife and remove from pan.
  10. Serve immediately with avocado, salsa, herbs, or hot sauce, if desired.
  11. Cool completely and freeze in a zip-top bag or airtight container for later use.
