Smash Burger Tacos

Ingredients
- 1/2 cup mayonnaise
- 4 tsp sweet dill relish
- 2 tsp grated white onion with juice
- 1/2 tsp white vinegar
- 1 tsp paprika
- 1/2 tsp onion powder
- 1/2 tsp granulated sugar
- 1/4 tsp garlic powder
- 1/4 tsp kosher salt
- 1/4 tsp black pepper
- 1 1/2 lbs ground beef (80/20 or 75/25)
- 8 flour tortillas (6-inch)
- 1 1/4 tbsp kosher salt
- 1/4 tsp black pepper
- 8 slices American cheese
- shredded iceberg lettuce
- pickles
- diced white onion
- diced tomatoes (optional)
Steps
- Combine mayonnaise, relish, grated onion, vinegar, paprika, onion powder, sugar, garlic powder, salt, and pepper in a bowl. Stir until smooth, then chill until ready to serve.
- Divide ground beef into 3 oz portions, handling gently to keep the meat tender.
- Place one beef portion on each tortilla and spread it thinly and evenly to the edges using your fingers.
- Season the beef patties evenly with kosher salt and black pepper.
- Preheat a cast iron skillet or griddle to about 400°F (high heat).
- Place each tortilla meat-side down on the hot skillet.
- Press firmly with a burger press or heavy pot for about 1 minute, until the meat is caramelized on the bottom.
- While still pressing, unwrap a cheese slice, then remove the press.
- Flip the tortilla and add a cheese slice on top of the meat. Cook 1-2 minutes more until the tortilla is crispy and golden, and the meat reaches at least 160°F internally.
- Transfer to a plate and top with burger sauce, shredded lettuce, pickles, and diced onion.
- Repeat with remaining tortillas and beef, maintaining pan temperature at 400°F. Serve immediately.
Notes
Diced tomatoes are optional. Other seasonings can be added to the beef as long as they don't contain salt.
