Ramen Stir Fry

Ingredients
- 2 tbsp mirin
- 1 tbsp white miso
- 1 tbsp oyster sauce
- 2 tbsp light soy sauce, divided
- 1 tsp honey
- 1/2 tsp black vinegar
- 1/8 tsp white pepper
- 1/4 tsp toasted sesame oil
- 2 tbsp neutral oil
- 1/4 cup diced yellow onion or shallot
- 1 tbsp minced garlic
- 1/2 lb sliced pork or beef
- 1 cup sliced mushrooms
- 1/4 cup julienned carrots
- 7 oz firm tofu, cut into 1-inch cubes
- 1 cup chopped broccolini
- 1/2 cup shelled, cooked edamame
- 1 pack ramen noodles
- 4 cups water
- 4 scallions, thinly sliced
- 4 tsp chili oil
Steps
- In a small bowl, combine mirin, miso, oyster sauce, 1 tbsp soy sauce, honey, black vinegar, white pepper, and sesame oil. Set aside.
- Heat half the neutral oil in a saute pan over medium heat. Add diced onion and cook 1-2 minutes until softened and translucent.
- Add minced garlic and cook about 30 seconds until fragrant.
- Add sliced meat and cook 3-5 minutes, stirring occasionally, until browned.
- Add mushrooms and cook 2-3 minutes until softened.
- Add carrots, tofu, and half of the sauce mixture. Stir to coat everything, then lower heat to the lowest setting.
- In a separate pot, boil the water with remaining 1 tbsp soy sauce. Add broccolini and cook 2-3 minutes until al dente. Transfer broccolini to the stir-fry pan and mix.
- Add ramen noodles to the same pot of boiling water and cook about 3 minutes until al dente. Transfer noodles to the stir-fry pan.
- Raise the stir-fry pan heat back to medium.
- Add edamame and remaining sauce. Gently stir to combine and cook for 1 minute to heat through.
- Turn off heat, sprinkle with scallions and chili oil, and serve.
