Garlicky White Bean Dip with Soy-Roasted Mushrooms

Ingredients
- 2 cups yellow onion, thinly sliced
- 1/8 tsp kosher salt (for onions)
- water, as needed
- 16 oz butter beans, drained and rinsed
- 1 tbsp red miso
- 6 garlic cloves
- 2 tbsp plant milk, more if needed
- 1/4 tsp kosher salt, more if needed
- 1/8 tsp black pepper, more if needed
- 11 oz mushrooms
- 2 tbsp soy sauce
- 2 tbsp neutral oil
- green onions, thinly sliced
- fried shallots (optional)
- chili crunch (optional)
- extra-virgin olive oil
- pita chips
- baguette slices
Steps
- Caramelize the onions: heat a splash of oil in a pan, add sliced onions and salt, and cook slowly over medium-low heat, adding small amounts of water as needed to prevent burning, until deeply golden and soft, about 45 minutes.
- Make the bean dip: in a food processor, blend butter beans, garlic, miso, plant milk, salt, and pepper until smooth and creamy, adjusting seasoning or liquid as needed.
- Roast the mushrooms: toss mushrooms with soy sauce and neutral oil, then roast in a hot oven until browned and tender.
- Assemble: spread the bean dip on a serving plate, top with caramelized onions and roasted mushrooms.
- Garnish with sliced green onions, fried shallots, chili crunch, and a drizzle of olive oil.
- Serve with pita chips and baguette slices.
