Thai Basil Chicken

Ingredients
- 2 tbsp canola oil
- 2 large shallots, thinly sliced
- 6 cloves garlic, minced
- 2 Thai chiles, seeded and diced
- 1 lb boneless chicken thighs, cubed
- 3 packed cups holy basil leaves
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tbsp light soy sauce
- 2 tsp dark soy sauce
- 1 tsp sugar
Steps
- Mix oyster sauce, fish sauce, light soy sauce, dark soy sauce, and sugar in a small bowl; set aside.
- Heat oil in a wok over high heat and stir-fry shallots for 1 minute.
- Add garlic and chilies, stir-fry for another minute.
- Add cubed chicken and stir-fry until no longer pink, browned, and liquid has evaporated.
- Pour sauce mixture over chicken, toss to coat, and cook for several minutes until reduced.
- Add basil leaves and toss until thoroughly mixed.
- Serve with steamed rice or in lettuce cups.
Notes
Holy basil is traditional; Thai basil can be substituted if unavailable.
