Thai Basil Chicken

Ingredients

  • 2 tbsp canola oil
  • 2 large shallots, thinly sliced
  • 6 cloves garlic, minced
  • 2 Thai chiles, seeded and diced
  • 1 lb boneless chicken thighs, cubed
  • 3 packed cups holy basil leaves
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp light soy sauce
  • 2 tsp dark soy sauce
  • 1 tsp sugar

Steps

  1. Mix oyster sauce, fish sauce, light soy sauce, dark soy sauce, and sugar in a small bowl; set aside.
  2. Heat oil in a wok over high heat and stir-fry shallots for 1 minute.
  3. Add garlic and chilies, stir-fry for another minute.
  4. Add cubed chicken and stir-fry until no longer pink, browned, and liquid has evaporated.
  5. Pour sauce mixture over chicken, toss to coat, and cook for several minutes until reduced.
  6. Add basil leaves and toss until thoroughly mixed.
  7. Serve with steamed rice or in lettuce cups.

Notes

Holy basil is traditional; Thai basil can be substituted if unavailable.
