Masala Chai Tea Latte

Ingredients

  • 2 cups whole milk
  • 4 tsp loose black tea
  • 2 tbsp sugar
  • 1/2 tsp chai masala (spice mix, see below)
  • 1/4 tsp cardamom powder
  • 2 tbsp fennel seeds (or 6 tsp ground fennel)
  • 1 1/2 tsp ground ginger
  • 1/2 inch cinnamon stick (or 1/4 tsp ground cinnamon)
  • 1/2 small nutmeg (or 1 tsp ground nutmeg)
  • 4 cloves (or 1/4 tsp ground cloves)
  • 10 black peppercorns (or 1/8 tsp ground black pepper)
  • 1 pinch saffron threads (about 8 threads)
  • 10 green cardamom pods (or 1 tsp ground cardamom)
  • 1/8 tsp salt

Steps

  1. Make the chai masala: combine fennel seeds, ginger, cinnamon, nutmeg, cloves, peppercorns, saffron, cardamom pods, and salt in a spice grinder and grind to a fine powder. Store in an airtight container.
  2. In a saucepan over medium heat, combine milk, loose tea, sugar, 1/2 teaspoon of the chai masala mixture, and cardamom powder.
  3. Bring to a boil, letting the liquid rise almost to the top of the pan, then reduce heat and let it simmer down. Repeat this boiling and simmering process 3 times, stirring often, until the tea turns light brown.
  4. Strain into teacups and serve immediately.

Notes

The chai masala spice mix yields extra; store leftovers in an airtight container for future use.
