Crispy Honey Tofu Stir Fry

Ingredients
- 16 oz extra-firm tofu
- 1 tsp kosher salt
- 1/4 tsp ground white pepper
- 1/4 cup cornstarch
- 1/2 cup neutral oil (vegetable or grapeseed)
- 4 green onions, thinly sliced
- 1 red chili, minced
- sesame seeds
- 1/2 cup honey
- 2 tbsp hoisin sauce
- 2 tbsp soy sauce
- 2 tbsp apple cider vinegar
- 2 tbsp water
- 1 tsp sesame oil
- 1 tbsp cornstarch
- 1 tbsp water
Steps
- Drain the tofu, wrap in an absorbent towel, and press with something heavy on top for 15 minutes. Line a baking tray with paper towels and top with a wire rack; set aside.
- Pat the tofu dry, slice into 1-inch thick slabs, then into strips, then into cubes.
- Place tofu cubes in a bowl, season with salt and pepper, and toss with cornstarch until evenly coated.
- Heat oil in a wok or large skillet over medium heat. Fry the tofu in a single layer for 2-3 minutes until crispy on all sides. Transfer to the wire rack to drain.
- In a small saucepan, combine honey, hoisin sauce, soy sauce, vinegar, 2 tablespoons water, and sesame oil. Bring to a boil over medium heat.
- Mix 1 tablespoon cornstarch with 1 tablespoon water and whisk into the boiling sauce. Cook over medium heat until thickened, then remove from heat.
- Transfer the crispy tofu to a large bowl, pour the honey sauce over, and toss to coat evenly.
- Transfer to a serving platter, top with green onion, red chili, and sesame seeds. Serve with steamed rice.
Notes
Placing fried tofu on a wire rack instead of directly on paper towels keeps it from steaming and losing crispiness.
