Lebanese Hashweh (Vermicelli Rice with Spiced Meat)

Ingredients
- 1/4 cup ghee or butter
- 1/2 cup vermicelli pasta, broken into 2-inch pieces
- 1 1/2 cups basmati rice, uncooked
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/8 tsp ground cinnamon
- 3 cups boiling water or chicken stock
- 3 tbsp fresh parsley, minced
- 2 tbsp ghee or butter, divided
- 1/4 cup pine nuts
- 1 medium yellow onion, minced
- 1 lb ground beef or lamb
- 2 tbsp Lebanese 7 Spice
- 1/2 tsp ground black pepper
- 1/4 cup parsley, minced, for garnish
- 1 lemon, cut into wedges
Steps
- In a pot, melt 1/4 cup ghee over medium heat and toast the vermicelli pieces until golden brown.
- Add the basmati rice, salt, black pepper, and cinnamon, stirring to coat the rice.
- Pour in the boiling water or chicken stock, bring to a boil, then reduce heat, cover, and simmer until rice is tender, about 15-18 minutes.
- Stir in the minced parsley and fluff the rice with a fork.
- While the rice cooks, melt 1 tbsp ghee in a skillet and toast the pine nuts until golden; set aside.
- In the same skillet, melt the remaining ghee and sauté the minced onion until softened.
- Add the ground beef or lamb, breaking it apart, and cook until browned.
- Season the meat with Lebanese 7 Spice and black pepper, stirring to combine.
- To assemble, spread the cooked rice on a serving platter and top with the spiced meat mixture.
- Garnish with toasted pine nuts and fresh parsley.
- Serve warm with lemon wedges on the side.
Notes
Lebanese 7 Spice is a common blend used in Levantine cooking; substitute allspice if unavailable.
