Sardines Caldereta

Ingredients

  • 2 cans (5 ounces each) sardines in tomato sauce
  • 1/4 cup canola oil
  • 1 medium potato, peeled and cubed
  • 1 large carrot, peeled and cubed
  • 1/2 red bell pepper, cored, seeded and cubed
  • 1/2 green bell pepper, cored, seeded and cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 Thai chili peppers, stemmed and minced
  • 1 cup water
  • 1/4 cup green olives
  • salt and pepper to taste

Steps

  1. Drain sardines, reserving the tomato sauce.
  2. Heat oil in a wide pan over medium heat. Add potatoes and cook until lightly browned and almost cooked through, then remove and drain on paper towels.
  3. Add carrots to the pan and cook until almost tender, then remove and drain on paper towels.
  4. Remove excess oil, leaving about 1 tablespoon. Add bell peppers and cook for 20-30 seconds, then remove and drain on paper towels.
  5. Add onions and garlic to the pan and cook until softened.
  6. Add chili peppers and stir briefly.
  7. Add the reserved sardine sauce and water. Bring to a boil, stirring to combine.
  8. Add potatoes, carrots, and olives. Season with salt and pepper. Cook until potatoes and carrots are tender.
  9. Add sardines and bell peppers. Gently stir to combine.
  10. Cook until heated through, then serve hot.
