Greek Orange Cake with Syrup (Portokalopita)

Ingredients

  • 1 lb phyllo dough
  • 1 1/4 cups vegetable oil
  • 1 1/4 cups sugar
  • 4 eggs
  • 1 cup plain Greek yogurt
  • 1 1/4 cups orange juice
  • zest from 1 orange
  • 1 tsp vanilla extract
  • 4 tsp baking powder
  • 1 2/3 cups water
  • 1 2/3 cups sugar
  • 1 cinnamon stick
  • zest from 1 orange
  • 1 tsp orange blossom water (optional)

Steps

  1. Remove phyllo sheets from packaging and let them dry on the counter for 15 minutes.
  2. Preheat oven to 350°F. Brush oil on the bottom and sides of a 9x12 inch baking tray.
  3. In a saucepan, combine the water, sugar, and cinnamon stick with orange zest for the syrup. Bring to a boil and cook for 10 minutes. Remove from heat and let cool, then stir in the orange blossom water if using.
  4. In a bowl, whisk together the oil, sugar, and eggs. Add the yogurt, orange juice, orange zest, and vanilla, mixing well. Whisk in the baking powder.
  5. Tear and crumble the dried phyllo sheets into small pieces in a large bowl.
  6. Pour the batter over the crumbled phyllo, stirring to coat well, then transfer the mixture into the prepared baking dish.
  7. Bake for 40-45 minutes until golden and a knife inserted comes out clean.
  8. Remove the cake from the oven and pour the cooled syrup evenly over the hot cake.
  9. Let the cake absorb the syrup, then refrigerate for 1 hour before slicing.
  10. Serve with whipped cream or ice cream.
