Savory Moroccan Chicken Briouats

Ingredients

  • 2 cups rotisserie chicken, finely chopped
  • 1 yellow onion, finely chopped
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp ras el hanout
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper
  • 3 tbsp fresh parsley, finely chopped
  • 3 tbsp fresh cilantro, finely chopped
  • 18 phyllo sheets
  • 1 egg, beaten
  • 2 tbsp butter, melted
  • 2 tbsp toasted sesame seeds
  • 1/2 cup Greek yogurt
  • 2 tbsp harissa paste
  • 2 tbsp water

Steps

  1. Heat olive oil in a skillet over medium heat. Add onion and cook 2 minutes, then add garlic and sauté until translucent.
  2. Stir in chicken and spices. Cook 3-4 minutes, then add parsley and cilantro. Mix well and remove from heat to cool.
  3. Cut phyllo sheets into 4 strips lengthwise using a sharp knife.
  4. Place a spoonful of filling at the end of each strip. Using 3-4 layers of phyllo, fold into triangles like a flag, brushing with egg near the end to seal. Repeat with remaining filling and strips.
  5. Arrange triangles on a baking tray lined with parchment paper or a silicone mat. Brush with melted butter and sprinkle with sesame seeds.
  6. Bake at the recipe's set oven temperature for 20-22 minutes, until golden and crispy.
  7. Whisk together yogurt, harissa, and water until smooth. Chill until ready to serve with the hot briouats.

Notes

Serve briouats warm with the harissa yogurt dipping sauce.
