Savory Moroccan Chicken Briouats

Ingredients
- 2 cups rotisserie chicken, finely chopped
- 1 yellow onion, finely chopped
- 3 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp ras el hanout
- 1 tsp ground cumin
- 1 tsp sweet paprika
- 1/2 tsp ground ginger
- 1/2 tsp cinnamon
- 1/2 tsp kosher salt
- 1/2 tsp ground black pepper
- 3 tbsp fresh parsley, finely chopped
- 3 tbsp fresh cilantro, finely chopped
- 18 phyllo sheets
- 1 egg, beaten
- 2 tbsp butter, melted
- 2 tbsp toasted sesame seeds
- 1/2 cup Greek yogurt
- 2 tbsp harissa paste
- 2 tbsp water
Steps
- Heat olive oil in a skillet over medium heat. Add onion and cook 2 minutes, then add garlic and sauté until translucent.
- Stir in chicken and spices. Cook 3-4 minutes, then add parsley and cilantro. Mix well and remove from heat to cool.
- Cut phyllo sheets into 4 strips lengthwise using a sharp knife.
- Place a spoonful of filling at the end of each strip. Using 3-4 layers of phyllo, fold into triangles like a flag, brushing with egg near the end to seal. Repeat with remaining filling and strips.
- Arrange triangles on a baking tray lined with parchment paper or a silicone mat. Brush with melted butter and sprinkle with sesame seeds.
- Bake at the recipe's set oven temperature for 20-22 minutes, until golden and crispy.
- Whisk together yogurt, harissa, and water until smooth. Chill until ready to serve with the hot briouats.
Notes
Serve briouats warm with the harissa yogurt dipping sauce.
